So what are some dinner things you make that are quick and easy to make but also healthy and delicious? I need some new ideas and recipes. It's fine if it takes a while to cook, but I'd rather not have to mess with tons of different ingredients and lots of bowls and pans and stuff to wash...just some simple meals I can easily make (or that I can train the husband to easily make).

I think we need to add some more meals to our dinner rotation. I'm tired of pasta and tacos and chicken soup + salad we seem to default back to those 3 meals whenever we get lazy. 
So what are some dinner things you make that are quick and easy to make but also healthy and delicious? I need some new ideas and recipes. It's fine if it takes a while to cook, but I'd rather not have to mess with tons of different ingredients and lots of bowls and pans and stuff to wash...just some simple meals I can easily make (or that I can train the husband to easily make).

I made quinoa and black bean stuffed peppers with this recipe and really liked how it turned out. It's just me and two kids so I had a ton of the stuffing left over and froze it in two separate containers. The other day I made quesadillas with the filling. The kids seem to really like it. (Abby would like them more if she could handle any amount of spice.
) I made a few substitution- fresh spinach rather than frozen I don't do celery, grated some zucchini in as well...it's mostly ingredients I usually have.

what about boneless skinless chicken thighs....seasoned w mexican or italian or indian spice rubs - then pan seared in a pan (little olive oil) that can go in the oven - add some garlic and onions and peppers and a can of tomatoes (and some other veggies if you like) place in oven 350 F for 20 min or so - (serve over rice or pasta or cous cous or quinoa etc if you like)
or get chicken breasts on the bone - use a premade marinade or olive oil coating and spice rub - 350 F for about 35-40 min - great step by step here if you want to crisp the skin first (I usually remove it and don't eat it so I don't bother) http://www.chow.com/...=post-54292;rfc serve with some steamed broccoli/ carrots/ green beans/ spinach etc
chicken sausage , white bean and spinach (or swiss chard) soup - cut up sausage into little bites - pan fry it with some garlic and onions - once its browned add 2 boxes of low sod chicken broth, the beans and the spinach (washed and ripped into smaller pieces or use baby) let come to a simmer and serve (you can also add a pasta to the soup)

steam broccoli with sea salt, fresh lemon and raw garlic - serve with salmon burgers (you can buy them at the supermarket in the freezer section or fish department)
ratatouille is great for the winter months - can make it in one big p*t - serve over yellow or long grain rice

tonight i am eating lentils with sausage, but you can add chicken or turkey sausage if you like....super easy.....
another fave of mine is yellow split pea. I make it unhealthy by adding pancetta to it.....but you can keep it healthy
both yummy and healthy. minus the pork...
I also made chicken with mushrooms in a white wine sauce.....also yummers.

Quick Bulgogi
Top Round Steak thinly sliced
4 tablespoons Soy sauce(approximate I just pur it for a couple seconds) too much will make it too salty
2 Table spoons seaseme oil(approx) basically half as much as soy sauce
2 inch ginger chopped
2 cloves garlic chopped
1/2 cup brown sugar
toasted seasme seeds
green onions chopped
rice
Marinate beef in soy, seasme oil, garlic, ginger and brown sugar for at least 30 minutes.
Stir fry steak (it's thin so don't over cook)
Add seasme seeds and green onions for final minute
Serve over rice
