The second one on the right doesn't look ripe yet :(

So, regarding animal parts from Alaska, my friend's brother lives in Alaska (he's an ice road trucker) and brought down a buffalo heart the last time he visited. They stuffed it and smoked it. My friend says that "It's just a really lean muscle. If you like the more metallic taste of wild game you would probably like it. The stuffing was bomb."

For the record, I would not happily eat dog or hearts.

A good friend's mother pickles about 30-40 deer hearts every year. Most people that know her and hunt save the hearts from the deer they've taken and drop them off to her. It is actually very good and the pickling tenderizes it so it's not tough at all.
