i love Crystal! Smiles, it's similar to Frank's Red Hot and other Louisiana-style hot sauces...so, cayenne/vinegar base with no real sweetness, garlic or other overpowering flavor.
Kramer, i recently discovered El Yucateca XXX habanero hot sauce and i am totally addicted to the stuff. if you can take the heat, the flavor is amazing

oh my gosh Randy you evil temptress!!! crawfish Monica is my favorite, favorite thing at the fest. food-wise i mean

lobster is a bit closer to the taste and texture of crawfish, but shrimp will work too...i've used it and liked the result. i'd get larger shrimp and cut them into bite size pieces to more closely approximate the succulence of crawfish. then again, i'm not a fan of the smaller shrimp so do whatcha like. that sauce could make tire tread taste yummy

made this last night. I would suggest eliminating the salt and cut back a little on the cayenne and thyme.

crystal is my fave recently, since i can't get LA Gold in the store anymore, and haven't gotten around to ordering a case.
One thing I noticed though.. they have several different sized containers, and when you go from the normal table top size to the larger size the ingredients change.
on the table top size the ingriendent list is: aged cayenne peppers, distilled vinegar.
in the bigger sizes they list water and salt and some other nonsense. I need to pick some up this weekend, I'll check this out again and report back.
