In an effort to simplify, I've been slicing hearts of Romaine right down the middle and serving each half as a wedge dressed simply with really good olive oil and balsamic vinegar, sea salt, and fresh cracked pepper, and gorgonzola crumbles. That's it, that's all, and it has captured my imagination so much that I have been craving it every day for the past week!
The dressing seeps down in amongst the leaves and the cheese crumbles decorate the top of the cut leaves. It is as pretty as it tastes good!
Just had some again tonight with dinner and I am still in love with this wedge salad... I wonder how long this fascination will last? I think I may space it out with some other salads just so I don't get too familiar with it. I love it so much I want it to remain special!
