Its that time of year again-
Annual Better Friday Meat Feast

Menu

-Smiles - Slow roasted pork belly with braised fennel, dressed jerky chiffonade
-LadyGingechilla - Roasted bone marrow with parsley salad, panko crusted chicken livers fried in butter, spare ribs
-Dead and Grateful - Double chocolate beer brats
-Augeleven & Perc820 - Haggis, Pizza chiena
-Our roommate Quirk (not on the forum) is maybe making stuffed beef tenderloin with yorkshire pudding

Ribs and garlic are in a 250 degree oven...

we're doing a meat fest next thursday... I'm on vacation and my brother is up from Charleston. we're sharing the smoker, this should be interesting. :lol:

They'll go back in later- only this time under the broiler while the braising liquid reduces to a glaze.

Smiles has a better answer- but as far as I know it is a adobo/chili yougurt dressed cilantro andcucumber salad/slaw(?) with jerky sliced into very thin strips. Twas the noms- but too chewy for my stupid jaw

I forgot to get a picture of the towering dishes... but we got through it.

Apparently there is/was a campfire in the back, but I think i missed it.

I got meat poisoning.

Those ribs really were the best ever. An obscene amount of flavor and super tender. They insult and humiliate every rib I've ever had.

I can't believe we ate all that marrow.

By far when of the best meals eaten! The Dressed jerky chiffonade on sliced Parisian with parsley salad was amazingly good. But my double chocolate beer brats were down right scandalous! so tasty!

so tasty was it. I am definitely feeling like I should have braved bringing the rest of that haggis home. My favorite might of been the late night raid on the pork belly kracklin with Sriracha sauce.
