VW Jetta TDI wagon would meet both your space and mileage requirements. There aren't a lot of Wagons or large hatchbacks out there that get much over 30mpg.
The new 2011 Hyundai Sonata would be a much larger sedan than your Sentra and gets 35MPG on the highway. I have an 07' and the trunk is pretty large.

Does the back seat fold down in the Sonata? That was one of the big reasons I went with the sentra, it's actually long enough for me to sleep in. I have long items to bring to festivals sometimes, clown props.
I love the vw campers, but the mileage would kill me on my 100 daily commute.

yes, split folding rear seat. never tried sleeping in it, but I suppose some clown might try to. 
another benefit for someone like yourself who runs up the miles is the 10year, 100K warranty. Price is decent on the car. With a 5spd they can be had new for around 19K.
