Helllllllooooo Vibe Tribe! I cannot wait until Monday, but while I sit here and dream I am also looking for a good cookbook. It is really hard to find a good, somewhat easy, cookbook, so here I am looking for suggestions. I would like to find some that are somewhat more easy(prep time, cook time and ingredients). What is your favorite go to veggie/vegan cookbook?

I used coconut oil instead of olive, and way more zest and juice...ohh and added shallots when sautéing the zucchini. I think this would work well with raw zucchini as well
