Mmmm... Confit!

I'm in the process of making a French dish I have always wanted to try making - I had to cut-up a whole chicken into parts for the first time (kinda challenging, but I did an okay job of it) now I am sauteing the pieces in butter, then I'll pour off the fat, deglaze the pan with white wine, add heavy cream and reduce it to a thick sauce, put the cooked chicken back in to warm up with a par-boiled and sauteed cucumber garnish. Can't wait to try it out! :drool:

A beautiful, colourful veggie stir-fry with crispy tofu cubes - eggplant, sweet pepper, carrot, broccoli, green onion, white onion, garlic - purple, red, orange, green, white... In a spicy Szechuan sauce over brown rice - served with Creemore lager, a fine meal in the works tonight after a great day at werk! :happyhappy:

I made a new stoner grilled cheese creation over the weekend I will share.


Cooper sharp, banana peppers, fresh bacon, a dollup of cream cheese in the middle. Also asiago bread buttered and garlic on it. I call it the pepper popper grilled cheese.

Note: I use the recipe from the Quaker Oats canister. Super simple and no crap. Just oatmeal, raisins, flour, eggs, butter, vanilla, sugar, cinnamon, baking soda. Simple baking = YUM

on thursday i was in a cooking sort of mood. we had smoked pork chops with apples, sweet onions and thyme (awesome recipe for the cast iron pan) on the menu, with a side of asparagus... but i realized we'd have too much asparagus for just the two of us, plus 2 cartons of fancy fresh mushrooms (portobellas, oysters, etc...) in the fridge- so i bought a couple of pie crusts, bacon and cheese and made two AWESOME quiches... the pork chop dinner was great- but it was torture cooking all that bacon and not being able to eat it yet :) ok, so there was some nibbling going on... mmmm :)

i did a quick shrimp scampi over angle hair pasta for dinner.
lunch on Saturday was whole grain shrimp tacos, shrimp were peeld, cleaned and then cooked with evoo, garlic and sofrito.
used shredded cabbage and some mixed shredded "mexican" cheese and Valentina hot sauce over the top.

Turkey meatballs in tomato sauce with rotini. Oh YUM!
I've made turkey meatballs before but these were super deelish. JP said if I hadn't told him he would not have known they were turkey!

1lb ground turkey
1 egg
1/2 cup milk
1/4 cup chopped flat leaf parsley
1/2 cup grated pecorino romano
1tbs (or more) minced garlic
1 or 2 tbs of dried basil
1/2 to 3/4 cup of breadcrumbs
fresh ground black pepper
couple of shakes of bacon salt (weird? yes)

mix egg, milk, spices and cheese together
add turkey and mix well
then add breadcrumbs and mix well
form into balls and bake of cookie sheet at 325 for 15 minutes (or until done) Keep checking these and turning them so they don't stick or flatten out...

add turkey meatballs to homemade tomato sauce and simmer for 45 min to an hour

The last two nights of cooking were OFF THE HOOK!

Last night I tested out our brand new wok.. make awesome singapore noodles with shrimp and tons of veggies.... nommmmmm

Tonight was a special valentine's celebration. Bought 3 kinds of cheese (asiago, smoked gouda and sharp cheddar) and we made mac n cheese with crab and mushrooms, served with a huge salad. OMG... I can die and go to heaven now...

Finished the night with some red wine, strawberries, and chocolates from a local shop.

Happy girl :)

Cookin' up my kale, white bean, and bacon soup for this winter's night (yes, it is actually snowing!!! :crazy:) and adding pearl barley to it this time... Served with some nice crispy bread and triple-chocolate cookies for desert. :)

yes, though had to substitute fresh mozz for cheese curd as it's not readily available around here. It's okay, but not as good as traditional cheese curd

took the left over brisket, ground it up and made meatballs stuffed with fresh mozz. Homemade tomato sauce on the stove. Too lazy for the homemade pasta, so we'll be having store bought Bucatini with it

Here is the recipe I use exclusively and it's awesome!

You can use the ham steak OR the spiral ham and both will work just fine! I use my immersion blender after it's cooked to make 1/2 of the soup pureed and it makes the perfect consistency.

Went to a *** luck yesterday & made stromboli - one meat, one veggie. The meat one had genoa salami, black forest ham, pimentos, sauteed bell peppers, baby bellas, garlic and onion, mozzerella cheese and pizza sauce. The veggie one was all those veggies plus sauce, pesto, and lottttssss of cheese :) big hit!
