I made this last night...yummers....serve over rice....
4 or 5 cups of random veggies (I use mushrooms, asparagus, red & green peppers, but it's your choice)
2 or 3 baby bok choy
jalapenos (I use 4 or 5, but I'm crazy)
garlic (I use 4 or 5 large cloves, but I'm crazy)
grated lemon rind (1-2 tsp)
grated lime rind (1-2 tsp)
about 10 fresh basil leaves
1/2-3/4 can of lite coconut milk (a whole standard can makes it more like thai soup..still good, but too much liquid for a proper "stir-fry")
salt & pepper
hot pepper flakes
lime juice
First, get your rice going.
I then cut up all the veggies, set them aside and get the mushrooms sauteeing (with salt, pepper & chili flakes) then prep the sauce.
Sauce: In a blender or food processor, puree lemon & lime rinds, coconut milk, garlic & jalapenos.
Add sauce & the rest of the veggies to the wok/pan with mushrooms. Simmer til veggies are cooked. Add more hot pepper flakes, salt and/or pepper (to taste) along with lime juice (probably a tablespoon or so, but I just squeeze the juice from my lime into the mix).
