My sister says to steam the peppers first, makes for shorter cooking time. I did it last time and they came out pretty good.
Also, last time I used a Sicilian toasted orzo-like pasta instead of rice. They were ok, I like it better than rice, but no starch at all is good too.

would you like them to be vegetarian or meaty?
here is a veggie one http://carlastastytr...-leftovers.html
here is one that is all meat (technically I stuffed mini zucchini but I mean same idea just use a pepper) http://carlastastytr...l-zucchini.html
an eggplant cup w orzo & feta (just use the stuffing and stick it in a pepper instead of an eggplant) http://carlastastytr...plant-cups.html
quinoa and beef (instead of wrapping in grape leaves - stick it in the pepper) http://carlastastytr...ape-leaves.html
tomato basil quinoa (yep another zucchini one) http://carlastastytr...-stuffed-8.html

good one Carla!
i have no idea. i much prefer stuffed cabbages. good luck Jenny! i love that you're expanding your culinary repertoir. have you hurt yourself lately? Jason threatened to bubble wrap the entire kitchen, last night. i notice he still lets me do most of the cooking though

mine came out well, even after a serious of furtunate accidents. i used pasta sauce instead of tomato sauce or paste, long grain white rice, ground beef, onions, and salsa style diced tomatoes (i didn't read the label until after i dumped the can and had an hour long panic attack about it until i tested the finished product and was like
yum)
