I had most of this stuff on hand, and made only SLIGHT changes:
3/4 cup firmly packed dark brown sugar
3/4 cup white sugar
1/4 cup kosher salt
1/4 cup garlic powder
1/4 chili powder
1/4 cup smoked paprika
2 tablespoons ground black pepper
2 tablespoons ground ginger powder
2 tablespoons onion powder
2 teaspoons rosemary powder
1 teaspoon cumin
Picking up the ribs this afternoon and the only work left for tonight will be:
trim the ribs - membrane removal and any additional trimming
mustard coat - coat the ribs with a THIN coat of yellow mustard
rub 'em down - add the rub, and make sure we're completely covered.
wrap and wait - wrap the rubbed ribs in plastic wrap and refrigerate overnight.
We're hoping to eat between 2 and 3. Ribs will be coming out of the FRIDGE around 8:30 and I am aiming to have the smoke ready by 10:00.
I'm still on the fence for the 2-2-1 method (foil wrapped w/ a bit of apple juice at one point to introduce moisture) or a naked method (with a cider vinegar / olive oil spray bottle).
