Any one have a vegetarian cook book that they would recommend? I am looking for some fun, easy to cook, tasty recipes that would be good for kids. I picked up a vegan cookbook from the library and it was boring.. but I would be up for suggestions..

I like any cookbook by Sarah Kramer (vegan).

The Complete Vegetarian Cuisine by Rose Elliot has a lot of great recipes, but they tend to be on the more complex side. I'd wander a bookstore and see what jumps out at you and your tastes.

I agree with seany on the bookstore browsing. Our family is vegetarian. I have dozens of vegetarian cookbooks and the most worn books here are 1000 Vegetarian Recipes by Carol Gelles, Quick Vegetarian Pleasures by Jeanne Lemlin and Moosewood Restaurant Cooks at Home. These tend to require less unusual ingredients and contain lots of 20-30 minute prep recipes.
