Ive been making candied, choc covered bacon for my friends and family since 2008. I get my bacon from the Amish market, very thick cut and dry, candy it with brown sugar or maple sugar, coat with dark and milk choc, and drizzle with whote choc and some strips get pecans. Easily the greatest gift ive given!

I also like to chop up these strips and bale the chunks into maple corn muffins or choc chip cookies. Win

The bacon i get from the amish market is like 8 strips to the lb, and are dry to the touch. Very smokey...

so, it is already cooked?
We don't have an amish market, but the thick sliced bacon is doable.
