If you search the hungry girl website she has a butternut squash fry recipe- I've never tried it but it's always featured and is very popular.

Oh hey, my mother made this really good vegetable mix in the oven a few nights ago w/ squash, turnip, carrots, parsnip & some seasonings.
I'll ask her for the recipe if you want it.

Rich likes to make a squash casserole that Giada makes. It's in my cookbook of hers at home. It's soooooo good! Here are some links to other stuff on the food network website:

A good recipe for a mashed squash is sweet mashed squash (Also good w/ sweet potatoes)
Mashed squash, 1-2 tblsp pure maple syrup, a few dashes of cream & nutmeg to spice.
Good in place of mashed potatoes for a no/low white carb diet too.

I've never been a fan of squash, but I know some crazy recipes for it. :lol:

you can steam butternut squash. peel it and cut it into chunks and steam it! quicker than baking and more "snacky".

omg thanks.
Baking takes forever. I always but a bunch of water in the pan and then cover with foil...but it never crossed my mind to steam it in its entirety!

I cut it up with the peel on, slather in olive oil, sea salt and pepper and roast it in the oven 450-500 til it's browned. Mmmmmmmm... Then use any leftovers in a pasta dish with parm or romano cheese.

Try butternut squash in the bottom of the pan when you are roasting a chicken, or add it to beef stew - a must try!!!!
