I'm thinking about starting South beach. wondering if anyone (ahem Ravn) has some good recipies? Especially ideas for snacks & breakfast - I'm going to get bored w/ eggs! Thx :)

Joe's Special, Laura Style
Every breakfast place in the San Fransisco area seems to have their version of this local classic. Here's mine.

Easy Flax Breakfast Pudding
This "pudding" can be put together in the microwave in 3-4 minutes. You can add berries or other "mix-ins" - I have lots of suggestions. The flax gives it lots of fiber and good fat, plus a nice nutty flavor.

Blueberry Almond Breakfast Pudding
This easy, healthy, low carb breakfast pudding can be made with any berries or other addtions as listed. Make it in the microwave in under 5 minutes.

Bacon and Egg Casserole Recipe
I was looking for a way to achieve the "puffiness" of egg casseroles made with bread (Italians call them strata), and I found that including almond meal achieves a lot of the puffiness without the starch - but it works fine without it, too.

Denver Casserole
This is like a large Denver (or "Western") omelet, and is great as a main dish for dinner or brunch. Leftovers make a nice quick breakfast.

Pizza Frittata
This frittata can be for any meal. I like to make it for dinner and eat the leftovers for breakfast or lunch.

haha, ok so I didn't screen the recipes. sorry wende! :lol:

they look tasty... some of them can be tweaked if they have off-limits ingredients, i guess.

My personal fave


butterfly 1/2 of a boneless, skinless chicken breast
sprinkle the inside with some garlic salt
put in about 2TBLS of chopped fire roasted green chili's, and 2 tbls of sharp cheddar cheese. Roll up, secure with toothpick, bake at 350F for about 20 minutes or so.

serve with big green salad!

I just made really yummy pork chops. First saute 2 cloves of garlic in olive oil for 1 min, add salt, pepper, roasted red peppers (chopped) and 10oz of frozen spinach thawed & drained. cook until liquid evaporates & is warmed through. Take off heat & add lemon juice & feta.

Cut a slit in the side of the chop to make a pocket. Fill w/mixture & put on a roasting pan.

Brush w/ dijon mustard, lemon juice, oregano & garlic mixed together in a bowl. Roast under broiler

For store bought chops - 6 min one side 2-3 the other. I made my own chops about 1 inch thick & they took 8 minutes per side in an electric oven
