CRAZY CABBAGE

1 1/2 pounds ground beef
1 small onion, chopped, 2 1/2 ounces
1 small cabbage, coarsely chopped, about 1 pound 13 ounces before trimming
14.5 ounce can diced tomatoes, undrained
3 strips bacon
Salt and pepper, to taste

Brown the beef and onion; drain off the grease and season with salt and pepper. Put half of the cabbage in the bottom of a greased 9x13" baking dish. Season with salt and pepper. Top with the meat then the remaining cabbage; season again. Pour or spoon the tomatoes evenly over the cabbage and lay the strips of bacon over the top. Cover with foil and bake at 325º for 3 hours. Discard the bacon before serving.

Makes 6 servings

this is REALLY good. It has a slowroasted, almost German flavor. And, before you wonder why you throw out the bacon (which I did LOL) it becomes flavorless after baking for 3 hours. All of the baconygoodness leaches into the dinner

Sounds good but Barbie really doesn't like it when I eat cabbage.

mmmm... sounds yummy... kind of cabbage roll casserole. i would love it but kev wouldn't. he likes his cabbage rolls cabbage-free.

:lol: i never knew i liked cabbage until i tried this recipe. well, cooked cabbage. i only realized the delights of cole slaw in the past few years.

and, i guess i'm lucky in that it doesn't make me or Brian any gassier than normal :lol:

I like this one for cabbage:

Shredded red cabbage
red onion sliced
Apple slices
olive oil and a little cider vinegar
salt and pepper

saute the veggies up until tender in the olive oil, then add the apples and vinegar. Heat through. Yum.
