Crispy Corn Cheese Muffins

In a large bowl combine:

1 egg
1/4 cup corn oil
1/4 cup sour cream
1 1/4 cups cream corn (10 oz can)
3/4 cup grated cheddar

In a smaller bowl combine:

1 1/2 cups flour
1 tbsp sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda

Preheat oven to 400*. Combine wet and dry ingredients, stirring just until mixed.

Spoon into pan. Bake 20 min. Cool on rack. Makes 12 muffins.

* substitute 1 cup whole kernel corn for creamed
substitute 1 cup buttermilk for sour cream
