Black Bean Polenta

2 cups black beans
8 cups water
2 cups polenta or cornmeal
3 cups sliced green onions (2 bunches)
4 cups shredded garlic jack cheese
1 pint fresh salsa
7 oz chopped green chilis

In a large *** bring 8 cups water to a boil; add cornmeal slowly, stirring constantly. Cook 20 min or until thick enough to leave sides of pan.
Mix in green onion and half the cheese. Pour half into a 9x13 in pan. Spread salsa, drained black beans, chilies, and the rest of the cheese over the polenta. Pour the rest of the polenta over the top.
Bake at 350* for 20 minutes. Let cool before slicing.

Serves 8
