I've been cooking a lot healthier lately and would love some more ideas For dinner. Here are some of my favorite healthy dinners so far:

Beef and Arugula Stir-Fry
Citrus Savory Chicken
Vegetarian Chili
Apricot Glazed Salmon
Bok Choy Stir-Fry
Chicken with Kale stuffing

Vietnamese Chicken Ginger for 2

((I usually quadruple this recipe. We are having it tomorrow night, as a matter of fact))

2 chicken thighs, no skin
1/2 medium onion, diced
2 TBLS (or more to taste) fresh ginger, minced fine
1 clove garlic, minced fine
1-2 cans chicken broth

Put some EVOO in a stockp0t. (just a drizzle) add the onions, ginger and garlic, let them sweat a bit, add the chicken, lightly brown on each side. Add the chicken broth, bring to a boil, let boil for 3 minutes, cover *** and turn heat to low. Let simmer for 30-40 minutes. Taste, adjust seasonings accordingly (I usually add more ginger and a pinch of salt) Serve over sticky rice with a side of steamed broccoli. Serves 2

I like to butterfly a boneless skinless chicken breast, and fill the inside with a mix of part skim ricotta, chopped spinach and garlic, roll shut and bake at 350 for about 25 minutes.

pork tenderloin is one of my favorites.... they are soooooo tender and delicious sometimes I will butterfly and fill with things like raisins, pinenuts and some grain (ie brown rice/ cous cous etc) brown on the stove and then into the oven to finish or just marinade it and cook on stove top when I am more pressed for time

I also make chicken sausages with greens (kale, collards, swiss chard or spinach etc sautee w some shallots or onions) .... you can also make it over pasta) and toss with some diced tomato (and peppers/ mushrooms etc) for a more traditional type meal (ie meat /veggie /starch)

since I got over my fear of bones I have been making brined roasted apple cider chicken and its AWESOME! you make the brine (3 Q water, 1/4 c sea/kosher salt, bay leaf, whole pepper corns, 1 Q apple cider - heat till all salt dissovled then cool to room temp) clean out the chicken and then let it sit in the brine overnight - next morning I "stuff" it with garlic and an orange (in quarters) tie it up and into the oven at 350 for like 2 hrs - the skin is awesome looking (I don't eat it but those that do say its delicious...though that sort of eliminates the "healthy")

my other love is soups.... I make lots of chicken & veggie based soups with any left overs I have on hand
