View Full Version : Lime Cilantro marinade (on grilled veggies)

marinade: 1/3 cup lime juice
zest of 2 limes
a whole bunch of cilantro
1/4 cup olive oil
1.5 tsp dried oregeno
1.5 tsp hot sauce (I use green tabasco sauce)
.75 tsp Salt
.25 tsp Black Pepper
2 cloves of garlic, cut up

Mix everything together and use as marinade on thing of your choice. Marinade at least 30 minutes, but it's better overnight.

Today I'm marinading:
1 zucchini
1 summer squash
half a red onion
bunch of mushrooms
1 yellow pepper
can of artichoke hearts
8oz can of pinannapple chunks (juice added to marinade).
cut up bunch of asparagus
4 small red potatoes (precooked in water in microwave for 12 minutes)

Everything is cut into bite sized pieces and mixed together with the marinade, covered, and put in the fridge. After it's done marinading, you can cook it in any number of ways. Sometimes I wrap it in tinfoil and put it in the oven for an hour at 350, sometimes I do the same on the grill (in nicer weather), sometimes I cook it on a wok over a medium flame, stirring occasionally.

Use any veggies you particularly like :) Sometimes I add tempeh for more protein, but I'm going to have this as a side for rotisserie chicken later.
