My fave (that is crusted all the way through because it's been used so much) is called the Compassionate Cook..it is awesome...the recipes are SO EASY, it explains a lot...so many delicious things in there!

I just got a new one that I see mentioned on blogs all the time "Veganomicon"...can't wait to read it and start trying stuff. :)

Julia,

What are some dishes you enjoy from there? I cannot seem to find any sample pages online. Very bizzare going to a .ca instead of a .com :)

Some of the recipes I've made many, many times include:

-a rockin' (super easy) delicious lentil soup (there are lots of good soups in there)
-tofu *** pie (I've made it for self-proclaimed tofu haters and they loved it and said the tofu could have actually been chicken)
-spicy peanut pasta sauce (again, super easy and SO GOOD!)
-vegan stroganoff
-"cheesy" macaroni casserole
-broccoli & rice casserole

Oh, so many. They have a bunch of great salad dressings, appetizers (eggless egg salad, veg pate, hummus etc etc).

I just love it!

These ladies make vegan cookbooks but they are all good even for non-vegans.

My absolute fave - World Vegetarian by Madhur Jaffery

Any of her cookbooks are top-notch. I've learned all of my authentic Indian recipes from her, her directions are clear and concise and the food comes out AMAZING!!!

I can't suggest getting any of her cookbooks enough!

Outside of that, Moosewood has some awesome collections that almost ever library has on their shelves.

Happy cooking and feasting!

me too...and i LOVE 'Sundays at Moosewood' - more ethnic-y than the others, which suits our preferences.

mostly, though, i use 'regular' cookbooks and recipes and just adapt them to vegetarian/vegan using whatever proteins make the most sense and subbing soy milk or nutritional yeast for milk or cheese as needed.
