View Full Version : vegan "sausage" gravy and biscuits

craving my favorite wintertime comfort food breakfast, i made this a couple of weekends ago for J and i and it surprised us both how delicious it was. honestly i could barely tell the difference from the original, even after using soy milk instead of my usual whole milk!

1 package (roll) Gimme Lean breakfast 'sausage'
1 quart plain soy milk (i used Silk brand)
1/4 cup unbleached white flour
one small onion and 3 cloves fresh garlic, shredded or diced finely
black pepper, coarsely ground - i use a TON of pepper, maybe a teaspoon of fresh ground from my spice grinder, but use however much you like
2 teaspoons dried sage, or to taste
ground red pepper flake or a few drops hot sauce - to taste (skip if you don't like things a little bit spicey)
vegetable oil, just a few tbsp for frying
prepared or homemade biscuits

crumble and brown sausage over medium heat in a deep frying pan with a little bit of oil to help prevent sticking. while browning, add shredded onion and garlic (to taste...you can skip this, but i think it gives a great flavor) as well as the dried sage (which could also be skipped, but i felt that the veggie sausage needed it to taste more like the real thing).

once the 'sausage' is browned nicely and seasoned/crumbled as you like it, remove it from pan and add a tablespoon of oil and 1/4 cup flour to the pan. cook for a few minutes over medium heat to remove 'raw' taste, and return sausage to pan.

turn heat up to medium-high and begin pouring soy milk (or moo milk if preferred) into sausage mixture, stirring gently to get all the brown bits off the bottom of the pan while mixture comes to a bubble. continue adding milk until desired consistency is achieved - you won't use the whole quart, as the mixture should be thick like country gravy when done thickening.

add coarsely ground black pepper, ground red pepper flake and taste, then adjust seasoning as needed (adding salt or more sage if desired).

serve warm over split biscuits. YUM!!! :jamguy:

i know, i thought the same thing when the craving for the real thing hit me. but honestly? it's awesome...better in some ways than the original even!

thanks for the spankins though. :naughty: that's twice now i got spanked for the same recipe :grin:

did i mention i'm trying to replicate the shepherd's pie i grew up on in vegan form this weekend? :huh: :devil:

Hah! I have made veggie shep pie before and I have to say it was damn good. <ducks from Ravn :lol:>

I use the Gimme Lean veggie grounds, corn and roasted garlic & parmesan mashed potatoes on top. Sauteed onion and soy sauce and assorted spices in the veggie crumbles does well. Damn now I want. :lol:

i bet! i made shepherd's pie with Gimme Lean 'sausage' AND beef sauteed with diced onions and garlic, plus red bliss mashed, some mixed veggies, cheddar cheese and Hain veg 'beef' gravy.

it was AWESOME!!!!

oh and i made the sausage gravy again. oof. comfort food overload this weekend :lol:

While I respect your right to enjoy whatever diet you feel is apporpriate for you, that is so wrong on so many levels, I can't even begin to list them. :ravn:

just trying to adapt to my boyfriend's diet (i'm an omnivore, but he's a veg who doesn't use much dairy taboot) since i do most of my cooking on the weekends when we're together and prefer to reheat leftovers throughout the week for the most part.

and for what it's worth, with all due respect to your meatatarian sensibilities...it was delicious - though i did cheat and use real cheese on my portion :grin:

i used GL beef and sausage all crumbled together (i accidentally bought the sausage, it was in the same space as the beef) browned up with onions and garlic, then added some 'meat' seasoning blend from a grinder that has rosemary, thyme, black peppercorns and a bunch of other spices. before putting it in the Corningware to bake i mixed a bit of the gravy in with this to add moisture.

the mashed potatoes were simple, just red bliss potatoes, butter and milk. salt and pepper.

i used frozen veggies this time...big coin-cut carrots, green beans, peas and corn i think it was. i made it Friday night after work, so i wasn't into dicing a bazillion veggies.

and i topped my half with sharp cheddar.

oh and Hain veg gravy is awesome, for a packet gravy. how do they do that? i added a splash of red wine and some of that spice blend for extra flavor but it really didn't even need it.

I'm back on South Beach, so I get one cheat night a month. Normal people choose chocolate. I choose carbs and meat smothered in gravy! :drool:

Yeah, if I'm going to "cheat," I usually opt for food rather than sweets. Though a bit of chocolate always manages to get included. :wink:

oh, and i recently discovered Morningstar Farms 'sausage' crumbles in the green bag (freezer section). they make breakfast sausage gravy a LOT simpler than the Gimme Lean sausage :dance:

When I'm eating biscuits again (also doing SouthBeach right now), I'm going to try this. I've never had real sausage gravy and biscuits but it looks good. Thanks Jennie.

Can someone explain the "biscuit" part of this equation to me?

Obviously, this is not a meal I've ever had. I have no idea what you mean by biscuits. But it sounds yummy and I want to try it.

they're flakey baked yumminess. you can split them in half and put eggs and bacon and cheese on them (hahaha, i am NOT a vegetarian personally, obviously) or serve them with your favorite comfort food (awesome with beef stew!) or top a *** pie with them instead of a standard crust or...well, pour sausage or fake sausage gravy on them for breakfast!

they are amaaaaazing. a popular brand in US stores is "Grands" but they're also easily made at home w/Bisquick.

do they sell Bisquick in Canadia?????

Kerri good luck w/South Beach. this recipe is rather sinful i'll admit! :)

Oh, I think they do sell Bisquick in Canada, just not something I've ever purchased. I think my dad might have made biscuits when I was little, but, it's a very vague recollection.

sausage gravy and biscuits :thumbup: use the recipe at the top, just sub real breakfast sausage (Jimmy Dean or whatever, you know, the tube kind) for the Gimme Lean and milk for the soy milk :)

i haven't found morning star products to be that good but i'll keep an eye for another brand of those maybe. :thup: i found cooking the gimme lean a little difficult as well, i tend to form and cook patties of it and then cut the patties up into crumbles. although i must say, i haven't even come close to cooking the whole tube at once though! :) (my sealing machine is getting more use than ever too! :grin: )

i hear ya Nancy! i use morningstar because of the convenience of pre-crumbled vs. tube...and add so much flavor w/seasonings (sage, cracked black pepper, etc) and grated onion and garlic and whatnot that it would taste great no matter WHAT 'sausage' you used.

with the GimmeLean i've found that breaking it up as i add it to the pan really helps. in slices or blobs, whatever. but yeah...Morningstar it is for me, until i find something better. let me know if you have any luck there please :)

when i used the whole tube (hush, Wit!) i end up with tons of leftovers. it makes enough to top 10-12 biscuits i guess?
