View Full Version : Potato Crust Quiche! (thanks Thug)

Jersey Thug posted the idea of a potato crust quiche - it is so easy and so yummy!! See the peace sign tomato??
1 bag of shredded hash brown potatoes
4 Tbsp olive oil
Thaw potatoes and add oil to bag, smush together and press (really press it!) into pan (I used a cast iron frying pan) Bake at 425 for 15-20 til slightly browned.
This is where you get creative, add anything you want. I used...
bag of spinach - just dump it in the crust
sauteed onion, shallot and garlic
1 package of feta cheese crumbled all over
5 eggs blendered with 1 cup of milk, salt, hot sauce, nutmeg - pour over all ingredients...
I put tomatoes and pepperoncinis on top
baked at 425 for 15 min and turn down to 350 approximately another 25minutes? til done. Let it sit for a bit before you cut it and to reheat it, I left it in the pan and just heated it on the stovetop - the potato crust got all crispy again. mmmmmmmmmmmmmm

love love love the idea of adding hot peppers...i'd probably use long hots because i love them so much and they wouldn't add a 'pickled' flavor...i use enough hot sauce that there's already enough vinegar, hahaha!
i shake the hot sauce on after the rest is assembled...it sorta sinks into the egg mix and leaves little pockets of hot sauce that i really like, rather than having the heat spread evenly throughout.
did you add the onions to the potato crust, or just to the egg part? curious! and doesn't it make the BEST crust???? yummyummyummmmy!
mmmm...i really need to make one this weekend now :lol:

just the onion mixture in the egg part. next time i will season the potato. probably green onions and def s&p! (i forgot it) i sorta liked the pickled part and it reminded me of my favorite omelet + favorite salad from any jersey diner! i'll be makin another very soon - got the hash browns on my shopping list! okay, it's also a healthier version than your traditional pie crust quiche and look at the label of the hash browns - woot! there is no added salt or oil!! :happy:

hahaha...man quiche...that's what we call it here! :lol:
my latest was black bean/cilantro/green onion/roasted red pepper/cheddar with an onion/potato crust. lots of garlic & coarse ground black pepper.
i think i may need to make eggs for dinner tonight :lol:

the possibilities are endless! never would have thought of this but, it sounds amazing! ooooh, some salsa or guac or sour cream on top. this is a whole new realm... my mind is officially blown!

i love making this with diced onions, crumbled bacon, goat or cream cheese and lots of sauteed spinach w/garlic. i wonder how it would taste w/bacos (soy) instead? :lol:
