oh jeez
on the old boards (like a few boards ago) i could just click some magic button (i forget what it was called now) and it would just list all the threads ive posted in. i just want to do that again :lmao:
(my subscribed threads folder is empty)

If you go to your user profile (click your username where it says "Welcome, gram-man" at the top) and click the Statistics tab, you can see both all your posts and every thread you've started. It's not quite the Participated Discussions option from the last board, but it's something.
It's a workaround until we know for sure that there's something similar for vBulletin.
OR
in your "Edit Options" section, find this:
"Default Thread Subscription Mode
When you post a new thread, or reply to a topic, you can choose to automatically add that thread to your list of subscribed threads, with the option to receive email notification of new replies to that thread.
Default Thread Subscription Mode:"
I clicked "no email notification" and then posted my "test" reply to this thread. Then I went to the "Quick Links" drop down menu at the top right of each page and clicked subscribed threads and this thread was listed...
After I tested again I clicked again and this thread was only listed the one time...
OR
Click Search>Advanced Search>Enter user name>search now
