Today I put a potroast in the crockpot, on my dinner break I made a sliced *** roast, swiss cheese, hot sauce, and deli mustard quesadilla. For the *** roast gravy I used my frozen homemade "sofrito", a little vinegar, maple syrup, and tomato paste, which later I will reduce down into barbeque sauce. My home made sofrito, I don't know what else to call it, is made like this: I cut up a bunch of onions and carmelize them for about an hour, and then I add a dried chipotle pepper and a dried New Mexico or ancho pepper and some fresh garlic, and carmelize it all some more until the onions resemble goo. I then freeze it in a zip lock and I use this to make beans or whatever. Yummy!
I use tortillas instead of bread because my bread always gets green before I can eat it.
For a more heart healthy version, just add some bacon.
