this one is a big hit at our house, and SO healthy. we usually serve it over yellow rice. the key is using a GOOD white wine, not just the kind you can buy at the supermarket.
BASQUE FISH SOUP
1 large onion, chopped (1 cup)
½ cup chopped celery with leaves
1 large clove garlic, crushed
2 tablespoons butter or margarine
1 can diced tomatoes (28 ounces)
½ cup dry white wine
½ cup minced fresh parsley
1 teaspoon salt
¼ teaspoon each pepper and thyme
1 pound flounder cut into 1 inch chunks (or any mild fish)
In large saucepan sauté onion, celery and garlic in butter or margarine until tender. Stir in tomatoes, wine, parsley, salt, pepper and thyme. Cover and simmer 30 minutes.
At this point you can refrigerate or freeze, if desired.
Add fish and simmer 7 – 10 minutes or until fish is opaque and flakes easily with fork. Makes 4 to 6 hearty servings. Good with crusty bread and salad of mixed greens.
To reheat tomato mixture, cover and simmer 10 minutes until hot. Add fish, Shrimps or tuna and cook as specified. If desired, sprinkle with additional minced parsley.
Shrimp Soup: Substitute 1 package (12 ounces) frozen raw shrimps for fish. Add to boiling tomato mixture, bring to boil again, remove from heat and let stand 1 minute.
Tuna Soup: Substitute 2 cans (7 ounces each) tuna, drained, for fish. Add to boiling tomato mixture just to heat.
