Need some super tasty recipes for low-fat, heart healthy meals...

Preferrably stuff w/ not too much/any cheese (sniff), lots of whole grains, and maximum deliciousness. Diddy eats meat, i eat fish... so recipes w/ either... we are turning over a new leaf & need some idears. Some of our staple healthy meals are things like:

salmon w/ rice pilaf and steamed broccoli

veggie burgers w/ sauteed portabellos & fresh tomato

pan-seared scallops over spinach

but we need new ideas!!! the same few recipes get old after a while, and we're trying to cut out things like tuna melts (mmmm), grilled cheese (mmmmmm), soft tacos loaded w/ cheese, rice, beans, and sour cream (MY FAVE)

help! :)

Thai Peanut Sauce for Chicken
1tsp. Grated ginger
½ clove garlic (small) mashed
1 tsp honey
2 tsp. Red wine vinegar
¼ cup peanut butter (I use smuckers all natural)
2 tbsp. Hot chili sauce
1 ½ tsp sesame oil
2-3 tbsp. Extra virgin olive oil
2-3 tsp toasted sesame seeds
salt & pepper to taste

mix all together, pour over chicken! ( stir fry the chicken with onions and garlic)

serve over rice or noodles!

I can't figure out how to make the red go away. I posted this one a while back and did a search of the forums for it

my favorite recipe site is cookinglight.com - basically everything is awesome on that site and they make it much healthier than "normal" though it is still far from super diet food - just be careful cause southern living is their sister site and sometimes those recipes are in the list too.... and SOOOOO not healthy

some of my favorites from them are:
open faced falafel burger (only issue is b.c not deep fried they aren't super crunchy) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1215899

tabbouleh w. beans and feta (AWESOME!!!) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=225926

scallops w/ celery & cilantro mayo http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=549779

tex mex bean spread (this was the stuff I made for the umelt party....really good on meat or fish w/ rice) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1065532

cider roasted chicken (wow holy shit.... most juicy awesome chicken ever!) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=701063

hot and soup soup (needs more vinegar than called for) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1054859

pumpkin cranberry muffin (so moist and amazing - I make loafs and give away) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1673146

spicy sweet potato wedge (yum! favorite side!) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=701068

rainbow fried rice (awesome psuedo Chinese! I use way more veggies though)http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1097028

shephards pie (rich and heavy... I also added a bisquick crusty top) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=640173

fresh spring rolls w dipping sauce (aw one of the things I made the first time JG came over for dinner... we made them together and he learned that I was an OCD bitch!) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=604766

meditteranean tuna cakes (one of my absolute favs... you can use salmon too) http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=223116

Carla- i can always count on you for the good stuff :) i will totally try some of those!!! ps i love you BECAUSE you are an OCD bitch bc I am the same way :) <3

Ravn, mmmmmmmmmm, peanut sauce! that looks SO good. we made stir-fry w/ some Trader Joe's peanut sauce this week but it was fairly flavorless. homemade is the way to go! :)

make a stir-fry! you can put shrimp/scallops/etc or meat in there, or neither!!

sesame oil in wok or big frying pan with ginger and garlic. put in meat or fish and let it sit for a minute.

add any veggie you like! i like zucchini, yellow squash. kale, boc choy, red and white cabbage and broccoli

add a little water to your wok!

once the zucchini and squash begin to look clearer in the middle rather than white you are all done!

add some cooked brown rice and some soy sauce and enjoy!

one of my fav recipes!

i'm a big fan of the stir-fry. i tend to go overboard and spend like $30 on the veggies for it, but then it makes about 5 servings and we have leftovers for a couple days :) mmmmmmmmmmmmmmmm :)
