for a growing 7 year old boy.
so far I've got:
natural peanut butter with apples/celery/carrots/wholegrain toast
bean and cheese quesadillas
sliced cheese and veggies/fruit
granola and whole milk yogurt

home made yogurt. I learned to add some powdered milk at the beginning. it comes out thicker that way.

you may get some snack ideas from the lists of nutritionally dense foods.

I like how the recipe specified the amount of splenda in "packets".

I like to make tuna macaroni salad! That would work too! (macaroni noodles, miracle whip, tuna, hardboiled eggs, celery, cucumbers)

my mom used to make celery and peanut butter "boats" with raisins as "people" :) then we'd make flags w/ toothpicks and paper cut into triangles. how fun is that? u can do the same w/ hard-boiled eggs or deviled eggs for some fun with your food :)

this could be fun:
Pickles in a Blanket
INGREDIENTS:
12 thin slices Genoa salami
1/3 cup whipped cream cheese
12 jarred mini gherkin pickles (also called cornichons), drained, plus more if needed
1. Spread each salami slice with a thin layer of cream cheese to within 1/4 inch of the edges.
2. Place a gherkin pickle or two in the center of a salami slice. Roll up each salami slice, jelly-roll style.
3. Cut each roll into thirds, pierce each third with a toothpick, and arrange on a serving platter. Serves 12 (makes 36 rolls).

How do you turn a sandwich into a fun snack? Make it a stick-wich!
INGREDIENTS:
bread
cheese
lunch meat
grape tomatoes
lettuce
pickles
olive
1. Cut up cubes of bread, cheese, and lunch meat (we ordered 1/2-inch-thick slices of ham and turkey at the deli counter).
2. Slide the cubes onto a skewer with other foods your child likes, such as a grape tomato, a piece of lettuce, a pickle, or an olive.
3. Set out a side of mayo or mustard for dippin.

Taco Munch
INGREDIENTS:
6 cups popped, unsalted popcorn
3 cups toasted corn cereal squares
1 cup mini-pretzels
2 tbsp. butter, melted
2 to 3 tsp. dry taco seasoning
2 tbsp. grated Parmesan cheese
4 oz. cheddar cheese, cut into 1/2 inch cubes
1. Combine popcorn, cereal and pretzels in a large bowl. Combine butter and taco seasoning and drizzle this over popcorn mixture. Sprinkle with Parmesan cheese and toss to coat.
2. Store in an airtight container. Toss with cheddar cheese just before serving. Makes 10 servings.

INGREDIENTS:
1 small banana
1/2 cup chunky peanut butter
1/2 cup toasted wheat germ
Finely chopped peanuts, mini-chocolate chips, or shredded coconut for coating
1. In a medium bowl, mash together the banana and the peanut butter.
2. Stir in the wheat germ. Roll individual tablespoons of the mixture into balls, then roll the balls in one, or a mix, of the coatings listed above. Chill until firm. Makes 14 balls.
3. Variation: For a peanut-free version, substitute sunflower-seed or soy-nut butter for the peanut butter, and omit the peanuts and chocolate chips (which can contain traces of peanut).

This recipe makes me drool!
I buy these things called "snow balls" at Nature's Corner in Silver Lake. They're raw, vegan "cookies" made from dates/raisins/dried fruit, nuts and honey. They're delicious. Such a treat and totally packed with protein!!!!

ravn --- this is the list they give on one of the food sites I go on as "calorie dense foods"
- All natural peanut butter
- Dark chocolate
- Raw almonds, cashews & other nuts
- Fruit & especially Fruit Juice
- Whole grains, pastas, rice & cereals
- Potatoes, yams
- Sunflower seeds
- Dried fruit
- Beans & other legumes
- Avocado
- Dairy such as 2% milk, cheese, yogurt
- Fish high in omega-3's such as salmon, tuna
- Red meats with the word "round" or "loin" in the name
- Cook vegetables/meats/etc in olive oil
- Add flaxseed or flaxseed oil to your food
- If you can't get enough calories from food, try a meal replacement shake. Add peanut butter, flax oil, fruit, etc to make it even more calorie dense.

oh, I thought of another one
take a flour tortilla, spread with herbed cream cheese, fillup with cut up veggies, roll up :D
or
homemade pizza rolls, flour tortilla, spoon on some pizza sauce, add cheese, green peppers and turkey sausage, roll up, brush with olive oil, sprinkle with parmesean cheese, bake for about 10-15 minutes or until melty
