I'm thinking about this for my daughter's birthday cake this weekend. Where do you get gel food coloring though?? I've only seen the drops you get in the grocery store. :huh:

Apparently you can find them at Walmart. If you read the Q and A section at the bottom, one woman said she found it there.

and i guess it is pretty psychedelic considering how many "chemicals" are in it, too!

that doesn't mean I'm not goign to try it at least once tho! :lol:

And as far as chemicals go- yup this cake is loaded with em!! :huh: I'm sure you could just make a regular white cake and not use the cake mix or diet soda, and there are natural dyes out there (I don't know anything about them though).

I think when I make it, I'll opt for making it the usual way or at least use a regular Sprite instead of sugar free (I can't do sugar free).

As far as the food coloring, she did say that regular food coloring isn't bold enough to make the colors as dark as the gel. I'll take my chances.

PLUS, I'll be giving it to my cousin and her family to eat. Hahaha! I'll just ask her to cut a piece for me and giggle when she sees the cool rainbow inside. :)

I found the gel in my grocery store and it was $4, and appeared to be exactly the same as the little McCormick food coloring bottles that I already have a ton of at home. I skipped it. :wink:

Ladies, allow me to save you from the mistakes I made when making this cake last night.

First, keep in mind that if you make a double recipe, two 8 inch cake pans will not be big enough. If you only have two 9 inch pans, that might almost make it but be sure to put foil at the bottom of your oven just in case of spillage. I managed to set the smoke alarm off....which worked out because the cake was finished baking by then anyway.

Second, one box of gel food coloring is not enough to make seriously bold colors. I used an entire tube of red and it still wasn't red enough. The same went for the blue. So, by the process of elimination, I'm sure you've realized by now that with no more red and no more blue, I wouldn't have been able to make purple (had I not had extra food coloring in the house) or orange.

The cooking time DOES need to be longer because the cake is gooey. I haven't cut into it yet but it is frosted and ready to go.

I will try to remember to take pics tonight after I cut it open. :)

I'm limited to my cake mixes for gluten-free, and I think the closest to white I can do is yellow. I'm going to attempt it tomorrow night for my Dad's birthday on Saturday. :) I will let ya'll know how it works. :grin:

It was kind of gooey and super moist. My cousin liked it, my mother didn't. I thought it was okay. Maybe if it had been cooked longer, it would have been a bit less gooey. The colors still looked great though. :D
