lunch: kale in chicken broth mixed with sauteed onion, garlic, bacon and a little dried hot pepper, tossed with parmesan and, in this instance, chiocciole (the larger elbow macaroni-like pasta).

it was!

i got the recipe from my mom...and substituted bacon for chicken italian sausage. rather than use olive oil when sauteeing the onion and garlic, i reserved and used a little bacon fat. :)

the one on the left one is basic spinach and ham with cheddar and colby cheeses, cooked and cooling to be frozen for future consumption.

the one on the right is an experimental breakfast quiche. same cheeses but with diced, crispy homefried potatoes sauteed with chopped onion and garlic and crumbled breakfast sausage (chicken).

that's the one i had to try.

Last night Rich and I were watching the show on food network, Diners, Drive-In's and Dives and he went to a place in New Orleans, and they showed a fried shrimp po' boy. It looked absolutely freaking amazingly delicious! :drool:
